Gujiyas are a crowd favourite and a staple in every household during Holi. These sweet, fried delicacies made their way into India from the Middle East years ago and have been a popular Indian dessert ever since. Originally made with maida, khoya and dry fruits, these syrupy dishes also have variants that are enjoyed by the people in the country. We have put together a nutritious variant for health lovers so you can enjoy desserts this Holi without feeling guilty!!
Millet Dates Gujiya
INGREDIENTS:
GUJIYA PASTRY
Multimillet flakes
Rolled oats
Suji
Ghee
Baking soda
FILLING
Sanwa rice
Khoya
Almonds
Cashews
Raisins
Pitted dates
Cardamom powder
RECIPE
Step 1 - Put 1 cup of multimillet flakes and 1/2 cup of oats in a blender and blend until it turns to powder consistency
Step 2 - Take a bowl and add the flakes and oats powder, 1/4 cup suji, 3 tsp ghee and 1/2 tsp baking powder to make a tight dough
Step 3 - Cover it with a damp cloth and leave it for 30 mins
While the dough is resting, let's start working on the filling.
Step 4 - To make the filling, blend 1/2 cup almonds,1/2 cup cashews, 1/2 cup raisins and 3-4 dates in a blender to make a dry fruit mixture
Step 5 - In a pan, add 2 tsp ghee and the dry fruit mixture. Add a sprinkle of water and sauté the mixture till the dates turn into a semi-gooey consistency
Step 6 - Turn off the flame and sprinkle 1 tsp cardamom powder. Allow the mixture to cool down
Step 7 - Make small ball out of the dough and roll it with a rolling pin. Add the filling, fold the dough into half to create a pocket and then seal it from the sides.
Step 8 - Fry the gujiyas on medium heat and serve hot
**Note: It tastes best when served hot. You can add any nuts to the filling if the ones mentioned above are not of liking.
