We're putting together a list of dishes that you can make very easily at home using different kind of millets. Let's celebrate 2023 being declared the International Year of Millets with some mouthwatering uttapam from the southern part of India.
Uttapam is one of the most common breakfast dishes served in most states in South India and is also a crowd favourite in a lot of homes and restaurants across the country. Since we are putting together a list of dishes that are made with millets, are quick to make, great to taste and easy on the pocket, ragi uttapam is an unmissable one!
To quickly list down a few benefits of Ragi for those of you who might not know -
1. Ragi is very high in dietary fiber - much higher than polished rice, brown rice, and all other millets such as foxtail, little, kodo and barnyard
2. It is a great vegan source of protein
3. Magnesium is known to improve insulin sensitivity and ragi is high in magnesium. which makes it a great option for people with diabetes
4. Because of it's high protein content, ragi is also very good for hair growth

Ragi Uttapam
INGREDIENTS
UTTAPAM
Nutriplate Ragi Flakes - 2 cups
Rice flour - 1/2 cup
Chopped onions - 1/2 cup
Chopped coriander - 1 cup
Yogurt - 1/2 cup
Chopped green chilli - 1 tablespoon
Salt - to taste
Sunflower oil or ghee
Chopped tomatoes - 1/2 cup
TADKA
Hing
Mustard seeds
Cumin
Curry patta
Oil
RECIPE
Step 1 - Take 2 cups Nutriplate ragi flakes and grind it into a flour consistency
Step 2 - In a bowl, add 1/2 cup rice flour, 1/2 cup chopped onions, 1/2 cup chopped coriander, 1/2 cup dahi, 1 tablespoon chopped green chilli and salt to taste
Step 3 - Leave the batter for 2 hours to rise
* While the batter rises, let's make the tadka
Step 4 - Heat 1 teaspoon oil in a bowl and add mustard seeds, cumin seeds, curry patta and hing to it
Step 5 - After the batter has risen, add the tadka to the batter and mix well
Step 6 - Mix well till it gets a batter like consistency. Make sure it isn’t too watery.
Step 7 - In a pan, add oil and batter to create small uttapams
Step 8 - Let it cook on low heat and add chopped tomatoes and coriander on it
Step 9 - Flip the uttapams and cook on the other side until golden brown
Step 10 - Serve hot with coconut chutney
